A Western North Carolina native with a deep-rooted passion for Appalachian and open-fire cuisine, Brettโ€™s journey has been as unique as his approach to cooking. From studying photography at Appalachian State University to discovering his love for the culinary arts in San Diego, Brettโ€™s path led him back to the mountains he calls homeWith years of experience in Ashevilleโ€™s renowned food scene and a James Beard Award semifinalist honor under his belt, Brett brings a creative, locally-inspired approach to his cooking. At The Silo Cookhouse, heโ€™s excited to craft menus that celebrate the regionโ€™s natural bounty while fostering innovation and community.

Musings on Summerโ€™s end - Chef Dan Williams

This was my first summer at The Farm, and it was a good one, all things considered. We started a new dining concept that better serves the surrounding community. We hosted a huge food competition and came in second place, losing only to one of the best chefโ€™s in the country. Locals are taking notice. We see people more than once in a blue moon, and when they come in they tell us they canโ€™t wait to bring their friends and family for a visit.
