A Western North Carolina native with a deep-rooted passion for Appalachian and open-fire cuisine, Brett’s journey has been as unique as his approach to cooking. From studying photography at Appalachian State University to discovering his love for the culinary arts in San Diego, Brett’s path led him back to the mountains he calls homeWith years of experience in Asheville’s renowned food scene and a James Beard Award semifinalist honor under his belt, Brett brings a creative, locally-inspired approach to his cooking. At The Silo Cookhouse, he’s excited to craft menus that celebrate the region’s natural bounty while fostering innovation and community.

Musings on Summer’s end - Chef Dan Williams

This was my first summer at The Farm, and it was a good one, all things considered. We started a new dining concept that better serves the surrounding community. We hosted a huge food competition and came in second place, losing only to one of the best chef’s in the country. Locals are taking notice. We see people more than once in a blue moon, and when they come in they tell us they can’t wait to bring their friends and family for a visit.
