The Silo Cookhouse is thrilled to welcome Brett Suess as our new Chef de Cuisine. A Western North Carolina native with a deep-rooted passion for Appalachian and open-fire cuisine, Brettโ€™s journey has been as unique as his approach to cooking. From studying photography at Appalachian State University to discovering his love for the culinary arts in San Diego, Brettโ€™s path led him back to the mountains he calls homeWith years of experience in Ashevilleโ€™s renowned food scene and a James Beard Award semifinalist honor under his belt, Brett brings a creative, locally-inspired approach to his cooking. At The Silo Cookhouse, heโ€™s excited to craft menus that celebrate the regionโ€™s natural bounty while fostering innovation and community.
